I have a question. I have a graphic design studio and would like to know: if I buy a wordpress template to use in my own site can I pull out the “created by” info from the footer?

Yes, it is your theme so you can do whatever you like. Just remember that you mustn’t say that the theme/site was designed by you.

Most themes offer special field in settings for footer text etc.

Yep.

Although I’ve seen some authors say please leave “by xxx” in the footer once you have purchased it you don’t have to keep this in.
