Is there any way of changing the exclusivity rights on just one item?
I’m not planning on selling anything in the future anywhere else but just wondered in case? Or will envato ever think about implementing this and if not why not, why not?

No, you cant. Your allowed to have a second account though, one with exclusivity, one without
