They try to do it fast as possible, you can see your status in the waitinglist at the uploadpage.
Depends on what you’re submitting. In my experience, WP themes get approved/rejected faster (the next day after I submit) than site templates (usually 2 days). Probably because there are more site template submissions.

We usually have less than a 24 hour turn around. I aim for less than an 18 hour turn around and have personally never seen a site template take longer than 24 hours.

I have. It took two days before it was rejected. But that was last year. My recent site templates have been approved the next day after I submitted.
The always reject/accepted my themes very fast. Within 12 hours

I have. It took two days before it was rejected. But that was last year. My recent site templates have been approved the next day after I submitted.
Ouch, two days is awhile to wait but it’s definitely a lot better than the other marketplaces out there selling templates. Plus, I that was closer to the time ThemeForest was started so I would imagine things were a little more shaky and being figured out at that point.
If it makes you feel any better a friend of mine submitted something to GraphicRiver and had to wait almost 5 days, lol. GraphicRiver is growing pretty fast and one of their reviewers was gone for a bit. They’ve since added another reviewer to the team though so they’re taking care of that. At least it’s growing really fast!

Hey guys – Generally speaking, I ask the reviewers to shoot for a 24-48 hour turnaround. This is extremely reasonable, and as Jarel mentioned, we usually review much sooner.
My graphicriver item is reviewed within 48 hours, so I’m happy.
But I start at 20 of 20, yesterday there were 48 items or something.
And my theme over here was much faster, so here I was super happy, and at graphicriver happy 
I think it’s fast enough.
