It all depends…You can literally recode wordpress to do anything you want.

If the theme is unique enough it won’t need a gallery or a blog -> You might want to use it for real estate, cooking, or a wedding site.

Although, some of the bog standards features would be a portfolio with sorting, a blog, contact page and shortcodes.

does theme option plays a big role? can we use a theme option from a tutorial and modify it to fit our needs.. is it necessary to have shortcodes on a wp theme?

There aren’t any hard and fast requirements, apart from meeting WordPress standards (see http://codex.wordpress.org/Theme_Development_Checklist ).

What matters is what sells. If you want a theme options panel but don’t know how to write one yourself, you might check out OptionTree http://wordpress.org/extend/plugins/option-tree/

Shortcodes are good, but use them sparingly. Customers like them, but they can produce compatibility issues if the user ever switches themes.

There are many themes here that integrate OptionTree. That was part of it’s purpose in the first place.

Yes, you could base your options panel on a tutorial like this one: http://net.tutsplus.com/tutorials/wordpress/how-to-create-a-better-wordpress-options-panel/
