Why Full Width doesn't mean screen's full width?

I am finding it very hard to find shopping full width templates. I thought full width means the whole width of the screen but it seems it means something else. If you look at these templates which are from search results for ‘full width shopping’, the screens are not screen width. These templates have a ‘stretched’ or full width option. However the width of the content doesn’t change when you switch between Boxed and Stretched!

To me Full Width are sites like amazon.com or sears.com where the content takes the whole width.

So how do I find these types of templates/themes?
