HOW CAN I CHANGE THE VALUES OF THE CONTACT FORM?

You need to edit both the html and the form.php file.
On index.html, note that each field of the form has this scheme:

<input type="text" value="Name" id="name" name="name" class="fields" onfocus="if(this.value == 'Name') {this.value = '';}" onblur="if (this.value == '') {this.value = 'Name';}">

Note that all values starts with Caps.
Do this on the three fields of the form.

Also, edit the form-php and change the values on line 9, matching exactly the values you setup on html:

if ( isset($_POST['name']) && $_POST['name']!="Name" && isset($_POST['email']) && $_POST['email']!="Email" && isset($_POST['message']) && $_POST['message']!="Your comments..." ) {
