I went to “edward grey” ( as an example ) changed all the placeholder text I could find , and it didn’t work.

You can do this by deactivating all third party plugins, and seeing if the problem remains. If it’s fixed, you’ll know a plugin caused the problem, and you can narrow down which one by reactivating them one at a time.

Hello, I developed the site locally. When I upload the site to the server, and edit it as pages, as pages I edit lose the setting (theme options). I try to edit as (Theme Options) settings of the pages within the online server, however, as pages do not change. It is impossible to edit.

Hello Vanessa, please try to transfer the site using plugin https://wordpress.org/plugins/duplicator/ since it’s not possible to keep Theme Options via simple transfer of files and database.
Another option – you should to make sure all URL’s changed to new – use this tool https://interconnectit.com/products/search-and-replace-for-wordpress-databases/

1) please try to add extra rules at Theme Options custom css section or in style.css file:

2) you can add a contact form shortcode (you can add it on page or get on existing page and copy code at Classic edit mode) in a text widget.
3) You can edit contact form and another wording via theme translating. There are language files included in themes packages. It can be done in a few ways:
1. installation of extra plugin (WPML or some another one)
2. external software using, e.g. Poedit (https://poedit.net/ , goo.gl/QB4jEM?)
3. using PO Compser included in the theme (can be switched ON at Theme Options -> Services; then available under Tools or Appearance menu, please refer to theme documentation)
Another option – to edit code in files of theme.
