It appears that the design is not very flexible, and changing from one color to another is not possible. It seems that reinstalling the site from scratch is necessary. This is unexpected, as WordPress typically offers the capability to easily switch and update templates.

Yes you can adjust the colors easily under Appearance > Customize. The three demo's involve updating the theme options and demo content changes. The theme is the same for all versions so I'm not sure where you are picking up reinstallation the theme from scratch.
