Some pages and elements have their own fonts and color options set locally and local options will override global options. So, options set in global theme options will apply globally throughout the theme unless there are different local options set on page or individual section or element.

Sorry, other question: is it possibile to change the name of the section? Instead of “portfolio” to call it for example “collection”?

There is an option to set portfolio single layout to “Custom” as shown in screenshot. This way you can edit the portfolio single with Elementor as a regular page.
For other layouts there is also option to enable Elementor for description section (please see screenshot).

You can adjust name of menu items, titles and also url slug and adjust it to something else.
