Just a couple of questions.
Are you able to have multiple galleries?
And is knowledge of writing code required to utilize this template?

Yeah, you can have unlimited galleries. There is no coding required at all. Everything is easy-to-use and manage.
We also have documentation included with the theme that includes both screen-shots/written and video walk throughs. Lastly, we have a support forum which is available for buyers that have trouble: http://support.progressionstudios.com
Is it possible to display “local” (on our server) video ?
PS: not on Youtune oder others..
Yeah, you can display locally hosted video throughout the theme. The only limitation is that the fullscreen gallery only works with youtube/vimeo. However you can display locally hosted videos in place of the gallery easily.

We are rebuilding our site and “Partout” looks like a great theme. Especially: it displays the pictures correctly.
Yet, I have one question: using the uncropped gallery, is it possible to remove the < > which are displayed on the pictures. And also to display the thumbnail on the bottom ?

Yeah, you can easily remove the < > buttons and instead display the thumbnail on the bottom. The galleries have a lot of controls and options to display the galleries. You have the same options for the cropped and uncropped galleries.

Really nice theme, I want to buy but first I would like to know, how much I have to pay extra so that its not detected by wpthemedetector?
I have never heard of wpthemedector but I ran a few tests. It looks like the website just parses the data from the style.css file. So if you didn’t want this detected, you could just update the theme name at the top of the style.css file. This would be no additional cost and would only take a few minutes.
