So it seems there was a bug in the theme that hampered my ability to upgrade the WordPress core plugin. An updated version of the theme was released yesterday, I updated the theme, removed the previously installed plugin and just installed the new plugin. No more problems.
This is also the first time I actually bought a premium theme and wasn't fully aware of which files are required and which aren't for a child theme to be classified as such in this environment. No biggie, I'll just create the ones that I still need.
I will give the WP Bakery page builder the same effort as I put in to get to know Elementor and that shouldn't be an issue then. Not really fair rating a theme low because it uses a page builder that I am not used to - horses for courses.
I have also never developed any themes for reselling and it was unfair of me to claim it is loaded full of plugins when I don't know what a theme developer is allowed to include in a theme and when he is supposed to use a plugin for certain functionality.
Documentation is four yes 4! years out of date. an update would make this theme 5 star for sure.
