Hello, I wanted to know if I can create a new Page with this theme, where it’s possible to completely remove the site header, footer, sidebar – any such limitations. I want to be able to create many landing page variations… these will basically be like the homepage but with different text/image variations.

No, you can’t disable the header. You can remove it only by theme customizing.
I am wondering, on the categories-showcase page. Is it possible to display the blog home like that? If not, how hard would it be for me to change it so I could do it? I am thinking about, instead of listing the categories, it would list the blog posts. It could still show the category of the post, And maybe the title on top, smaller font size, black on white. And if the post is just text, the title and a small portion of the post would display instead of the picture. Is that possible to accomplish with your theme? If so, I will gladly buy it.
