Home Page Banner: All the home page banners are placed in Templates > Saved Templates.

To add banners based on your need please go to Edit Page > Page Custom Options > Banner & Title Area here in Choose Banner Type select Elementor Templates you’ll see options like Elementor Templates with dropdown please choose the needed template and add it to your page.

If you want to enable Elementor page builder on team singles, then enable the following setting.

Elementor > Settings > General > Post Types > Team (Check).

These areas are managed from theme options with shortcodes, not from widgets.

That is because of contents are handled by Elementor Page Builder.

So, activate Practice Area at Elementor > Settings > General > Post Types

I can set the menu to stay at the top and disappear when I scroll down instead of being fixed to the top of my screen?

You can enable and disable of Sticky header. Disable option just does normal load.

Header will stay in same position, and it’ll not come to us while we scroll.

Enable option does, sticky header. It’ll come while we scroll.

This only two option we’ve in our Lawrules themes.
