1.- Yes, If you mean home layouts and full color customization.
2.- We usually update the theme with Google Page improvements, but it is important to note the amount of Plugins or the amount of resources of your server could affect that score.
For example, if you are using 10 or more plugins problably that will affect the Google score, no matter what.

2.- The only way to remove some paddings is with custom CSS.

I think you should check that option on Yoast SEO and change the meta title and meta description editing that page.
Probably that should do the work, because by default it will show your Website title if that page is used as home.

I have installed a new logo – but the Theme seems to stretch the logo – is there anyway to minimum the header so this image fits perfectly?
The recommended size 160 is far too small for this type of logo you see.

I think you can use this custom CSS:
header .logo a img{ max-width: 400px; }
But also it is a very good idea to reduce the padding of your image (the main problem is the height), for example: http://prntscr.com/px5v44 so making a horizontal image should help you a lot: http://prntscr.com/px5vc4

But checking now your website it looks a lot better your logo.

Lo recomendable en estos casos si es que el blog lo iniciaste hace poco es esperar un par de dias si es que ya enviaste la solicitud para que tu sitio web pueda mostrar anuncios.

Revisa si en la parte de theme options -> optimizations esta habilitado enable lazy adsense, si es asi desactivalo.
Si no esta activado, prueba desactivando otros plugins.
Hola, ahora estan activos los anuncios, pero cuando se carga una pagina aparece un anuncio expandido en el footer, existe alguna forma para que cargue en el header en vez de el footer.

Si utilizas anuncios automaticos se supone que Adsense busca las mejores posiciones automaticamente y no respeta la posicion independiente de donde agregues el código.
Lo otro es crear un anuncio nuevo sin auto ads.
