I have checked and found that you are selecting display type as subcategories so the product is not displayed. You go to the edit category and need to select option Default or Product.

I am not a new member in the ThemeForest, I know procedures that I cannot use your theme that you describe. I cannot use Elementor PRO that plugin does not support. I do not have give you my purchase key and admin account that you send me an email which is archived.

You can go to Appearance -> Customize -> Shop -> Shop Single -> You can choose layout Single Default and Single 2.
With Single 1 and Single 3 we have a custom layout as a slider so the image will not change.

I’ve already done all of that – I’ve even tried manually putting all the coding in the theme editor, which solved the product Single Page problem – but the ‘APR Products’ on Elementor, doesn’t seem to work with the theme anymore. (This is also up-to-date) it’s the first time this has happened when I’ve updated the theme.

You can use some plugin to improve performance such as: autoptimize, cache (wp rocket, or some free plugin such as WP Fastest Cache, ...).
You can import basic content, and only one homepage that you want to use.
Could you let us know what is the UI break and the plugins when you update plugin?
