In the banner “packery” like in the Classic demo, is it possible to set a different font color for each banner? Some have light background pictures and some have dark.

Yes, you can. You can create multiple collection templates and assign them to each of your collection to control which one has the feature hidden.
Additionally, the menu you noticed is just one of our Header layout, which is left aligned. You can refer to our documentation [here] for more information.
