The Platform theme does not require Elementor or the Canvas plugin, everything you see on the demo site is built using the native WordPress editor (Gutenberg) without any third-party page builders.

As for ads blocks via Additional Content, yes, this theme also includes this functionality.

Just missing a few things I need with a blog is Gallery and Bookmarks

As for bookmarks, this functionality isn’t part of the theme and typically requires a separate plugin.
