I would not recommend that. They are used all over the theme. Why would you want to rename them?
You could create another post type for you needs.

Where did you get the error?
Test with the original file to see if the problem is caused by the added custom bits.
Installed updated version, this time around I got Parse error: syntax error, unexpected T_FUNCTION in /wp-content/themes/recipes/functions/voting.php on line 124. Custom bits turned off. WP 4.1 The error shows up in preview, didnt have a chance to use this theme yet.

I could help you with the columns, it requires some changes to CSS.

How customizable is the background/colour scheme?
Hello,
You can set the background color or upload a background image. So, you can set the background just like you want. This is extremely easy in the WordPress dashboard.
The accent color can be set in the Theme Options.
Other colors can be customized with CSS. There’s an textarea for custom CSS styles in the Theme Options. Or you can use the child theme to customize the theme.

Have another question…can I customize things like list icons (the check mark), or the ribbon showing popularity percentage? Aside from changing the colour…
You need some really basic knowledge of HTML to change the icon. You can use any icon from the Font Awesome icons, http://fortawesome.github.io/Font-Awesome/icons/
What do you want to change on the ribbon? It would need some basic knowledge of CSS.
I was thinking of removing the ribbon…
You could hide it with CSS, or completely remove it from the template files.
