On a legal level, both in the case of a civil or religious wedding, the witnesses who sign the marriage certificate are one for the bride and one for the groom. However, it is customary to add a witness on each side at a symbolic level and for emotional support for the couple. It is not usual to use 3 witnesses on each side (6 in all) but on a practical level if you wish so, why not? But I remember that only one witness on each side will sign the marriage certificate.
