Hello, I think, You are talking about Top menu category. So, will 3 level Category display in main menu.
Please follow following step for add categories in Top menu:
Go to admin : Catalog > Categories > click on Edit Category > Data Tab > & then On Check box for Top: Display in the top menu bar.

Please Download Latest Marketshop theme source from your themeforest account. & then install 2.3.0.2 theme source. and also, follow documentation.

Hello, Thank you for your interest in our theme. Multiple vendor functionality is not available in default OpenCart functionality. You will need to find third party extension for Multiple vendor functionality. and, if, third party extension have follow OpenCart flow. So, Design will work.

1. For mobile layout, is it possible to have a sticky menu? either a transparent button on the footer area which when clicked pops up menu (checkout panda theme – http://panda.sunnytoo.com/en/—try using it for mobile). So something like that or maybe from sideways pop-out? I really need optimized mobile performance.
2. Do you know if this is compatible with NitroPack extension by iSenseLabs?

(2) We can not say any third party extension. Normally all third party extension are compatible default OpenCart theme. So, Some time create issue in third party extension with Custom theme. So, there, You will need to contact it third party extension support for any third party extension issue.

Please Go to admin > Extensions > Modifications and click on the blue Refresh button (top right corner) for update the system & then check it your error issue.

You can edit & enable telephone & email from admin. Go to admin > Extension > Modules > Marketshop theme control Panel > General Options > Header > & then check Top Bar option > Here, You can edit & enable it.
