1. Website color can be changed in simple way with this tool https://www.screencast.com/t/8kVOtFn7I . I have created video which illustrated it. If you find any color which can be changed in this way, you should submit us ticket and we will provide you custom CSS code which can solve the issue.
2. Yes, icon color can be changed too. Provided video is illustrated that too.
3. Unfortunately we don’t provide demo access into admin panel of our themes for security reason. As I know no one author team doesn’t provide such service. But if you have questions, I will be more than happy to provide you solution.

Sure, so split the website into colour coded sections, red/blue/green/yellow, having the ions and menu that colour for each section.

I have tried editing the “fontello-codes.css” file but this doesnt seem to be having any affect.

Yes, it’s possible to add contact form shortcode to Home page. Unfortunately I’m not really sure what do you mean by ‘hero image’, could you please specify that and illustrate with screenshot?
Also you can try to re-built contact form plugin with any 3rd part plugin (for example Contact Form 7).
There is existed layout feature, so you can add login/logout feature, create My Account page and provide all required information to your customer.
