The issue you’re facing is probably because the Core plugin is not updated. We did major updates of the themes and we changed our Mikado plugins, mostly Core. So we can suggest you, when you’re updating theme, to delete our plugins and WPBakery, update the theme and then install those plugins again, Everything should be working fine after. There is no option in theme options to add this. If you want to achieve this, you’ll have to change it in theme files. If you’re familiar with coding you can contact support and they can point you to the files where you can make changes.

Maximum logo height is determined by the header height option in Theme Options > Header. As for the logo image itself, because of retina displays, image dimensions are being divided by 2. So if you upload the logo that is 100×100, the actual dimensions on desktop will be 50×50.

Unfortunately admin screen parts, and options, cannot be hidden without modifications. Booking functionality is handled with integrated tour plugin, and booking functionality is working like on theme demo, and it can’t be altered.

There is no field to add that code, since this is plugin territory. We suggest to use this 3rd party plugin to integrate Google analytics manually on your site: https://wordpress.org/plugins/insert-headers-and-footers/ or simply search for some other plugin which offers option out of the box https://wordpress.org/plugins/search/Google+Analytics/
