You can customize it as you wish, but it will requirement coding skill and it’s beyond our support policy so you will need do it by your self instead.

Does your system enable location based tax on the billing address for example charge GST 10% in Australia and 0% for the rest of the world. Also can a currency switcher enable the customer to see the cost in their own currency but checkout in AUD$. Does it use the woocommerce engine? Thanks

You can’t sort them in archive page, but you can sort them by use tour page builder item in our theme.
For the plugin, we don’t familiar with it so I’m not sure it’s compatible with our theme or not.

Please enable woocommerce payment gateways for Booking so that website owners can use other payment gateways as well as PayPal. Thank you for your suggested but we don’t have plan to make our tour system use woocommerce payment gateway in near future, maybe it will available in future but I’m not sure when.
For other payment gteway, you will need consider to hire a freelancer to do it for you because it’s big work.

I’m not sure I understand all your requirements, but if you want setup it like our demo from your screenshot, it’s possible. I don’t understand well what you mean: THE SAME TIME in the same shop.
You can’t add several tours when checkout, it will go one by one at the moment.
