We are using v5.0.6.1. I tried reproducing the issue with the online demo on firefox and chrome and while I got a similar error it is not exactly the same.

Yes, technically you can use the above plugins and exclude the rest. Please check the documentation and get started with the build tools and once you understand the file structure you can try to build your custom js and css bundle that contains only your selected plugins.
