Please try deleting the theme folder, and deleting all theme plugin folders completely before uploading the new theme. Then try installing the new versions of plugins.

If you refer to quizzes you can for sure create quizzes and have them on your courses. You can try user dashboard using test-test/test-test credentials to see how the course will look like from the front end user.
