Yes, you can use an ordinary post type instead of real products (for example, portfolio). And add a custom button inside of such a post with custom link.

For the first time, I imported a demo with Elementor. I am surprised how much of features and settings I am missing comparing to the WPBakery. I am not a big fan of Elementor, so I was wondering why WPBakery does not have such customisations? For example, I can deep-customize the Dropdown Menu but not with the WPBakery Theme Settings.

You can use one license for the subdomains, only if they are logical parts of the same website. E.g., when a blog, shop, and main website are on their dedicated subdomains (site.com, blog.site.com, shop.site.com).
If websites on subdomains are logically different sites (e.g., you are a service/hosting that offers websites to different customers), you will need a dedicated license for each site you build.
