Layout builders like Enfold’s Advanced Layout Builder use their own shortcodes; unfortunately, there is no way to simply convert those elements to Gutenberg or other layout builders.

If you are not receiving updates with a valid Personal Token, please use Envato Market plugin: https://www.envato.com/lp/market-plugin/ and insert your Personal Token into plugin options and check for the update in Themes tab

Could you please go to Enfold theme options > Shop Options > Product gallery and change it to “WooCommerce 3.0 product gallery” option and check if it works for you? With that option, main image would change to the one you clicked in the gallery, instead of hover. Not exactly what you requested but a pretty close one

Unfortunately any php version since 8 causes fatal errors in wpml
