Do you support different templates for each page category, i.e. About Page, Portfolio item, etc ? 3. Is it easy to implement custom CSS and would you suggest using Child Theme creation?

You don’t need to buy anything other than ArcHub theme. It’s super easy to manage portfolio sections with the high flexibility. Any template and page can be mixed and matched.
Custom CSS and Child theme are also easy to manage.

A single license is perfectly fine
You can do test on your staging server and then upload to your customer’s hosting.
