Shopify version has theme options panel. Please read FAQ section and theme’s documentation.

Most of this settings (logo, nivoslider, translation) is available under Opencart dashboard.

Probably some file of your Opencart installation is corrupted or some payment module isn’t compatible with the latest version of Opencart.

Yes, if you use Total Commander or any other FTP client click on Replace All, it will upload folder with theme and overwrite few controller files.

I know in the modest WP sites I’ve done, I’m able to make tweaks to each template (variable column widths, number of pics, etc.) Does this theme allow the same manner of customization? Or is each template page static, not allowing any variables at all?

This theme doesn’t have theme options panel. Themes with options panel cost $30+
